Baked Rosacea Toast with Fresh Berries

Canola oil for greasing
5 large eggs
3 1/2 cups almond milk or your fav. Whole milk
1 cup maple syrup
1/2 cup orange juice
1 lemon juiced and zested
Half loaf of your fav. Whole grain bread cut into cubes 1-inch.(I like to use sourdough or focaccia)
1 cup fresh washed blueberries
1 cup fresh washed blackberries
1/4 cup orange juice and 1/4 cup maple syrup

Preheat oven to 350 degrees and arrange rack in middle of oven. In large mixing bowl add eggs and whip. Fold in the maple syrup, lemon juice and zest and mix all ingredients together. Add the bread cubes and coat evenly in till well coated. Add 3/4 cup of both berries to mixture reserving 1/4 cup of each. Mix ingredients one last time. Lightly grease 9x13 baking dish with canola oil and pour mixture into dish. Bake uncovered for 35-45 minutes untill bubbly and golden on top. While this is baking place remaining berries in sauce pot with 1/4 cup orange juice and 1/4 maple syrup. Heat over medium heat stirring 10-15 minutes or in till mixture is reduced and syrupy. Set aside. Once baking is complete remove pan from oven. Let cool to room temp. And cut your desired slice from pan and place on serving dish, drizzle with your reserved fresh berry syrup.- Enjoy!

Chefs note: a little dollop of whip cream on top with this recipe will make the kids very happy as well.
