Watercress Salad with Blackberries

1 package watercress
4-Tblsp. Pumpkin seeds
2-Tblsp flaxseed
1 small red onion peeled and cut thinly
1/2 cup chopped walnuts
2- cup fresh washed blackberries
1-Tblsp. Fresh chopped mint

Roughly chop the watercress and toss into large mixing bowl with rest of the ingredients. Mix well to incorporate the flavor. This can be made a few hours ahead of time and can store in fridge for up to one day. Plate your salad and serve. Drizzle with your favorite dressing. Trying to avoid vinegar based dressings as this will aggravate your rosacea symptoms.-Enjoy!

My favorite rosacea friendly dressing for this salad is as follows.

1Tblsp fresh chopped cilantro
1Tblsp yeah chopped tarragon (optional)
1-2 shallots sliced and minced
1 tsp. Fresh chopped garlic (dry will work too)
1/4 cup canola oil
1/4 cup pomegranate juice
Salt pepper to taste

Mix all ingredients in blender or bowl using whisk. Drizzle on salad and enjoy.
This can be made day ahead of time and can store for 3-5 days.
